I have been using a modified version of SU2 v4.1.0 to run RANS-SA simulations of Mach 5 flow. I am now trying to run the same mesh with SU2 v6.2 and I am trying to keep the configuration file and options as consistent as possible.

I am having some confusion surrounding the "REF_ELEM_LENGTH" option from the v4.1 config file. It was set at 0.1 in my config file but I cannot find a way to implement this in v6.2. However, when I run the new config file with SU2 v6.2 (without specifying any reference element length for the slope limiter) the output file still notes "The reference element size is: 1" under "Space Numerical Integration". I am trying to ensure that the simulation is as consistent as possible between versions. Is there a way to implement my choice of REF_ELEM_LENGTH in v6.2?

Judging from v7 (which I really really recommend you use instead of v6.2) we dropped this option, it is hardcoded as 1. You can adjust the limiter coefficient instead so that the product length * coefficient is the same (that's all that matters for limiters).

Thank you. So to account for the change from 0.1 to 1, I can change my VENKAT_LIMITER_COEFF from 0.05 to 0.005 which will make it consistent?

Yes, that particular setting will be consistent, in the code those two values are always used together.
