In my simulation I keeping my velocity fixed at 1m/s and instead changing the kinematic viscosity to attain different Reynolds numbers. (Is this a correct approach? If not then please explain why?)

But the value of the density isn't mentioned anywhere? I need the value of the density to calculate the distance of the first grid point. Where can I specify the value of density so that I can use the same for my grid distance calculation? (And can I take any value of density similar to the kinematic viscosity?)

RodriguezFatz will become famous soon enough
I guess you are using an incompressible solver, right? There is no density in these solvers, just the kinematic viscosity.
