Physics and Mesh Conditions for Turbulent Internal Flow Sim

Hi all,
My simulation is modelling the heat transfer into a pipe from outside, constant temperature condition, with fully developed fluid flowing through. Currently, I'm interested in a plain tube with nothing inside but will have to model with a twisted tape insert to promote turbulence later. I have a few questions on general setting up of the physics and mesh since I'm still pretty new to using CFD. 1. Which turbulence model is most appropriate? I see that many simulations use K-Epsilon but during research I saw that SST K-Omega is more suitable for heat transfer sims (does this still apply at high Re?). 2. Following on, which value of Y+ should I aim for? I have a general understanding of how to set up the prism layer with regards to Y+, # of layers and growth rate and that I should carry out a refinement test to properly determine independent values but I'm a bit lost on which Y+ values are suitable for a given turbulence model. 3. Any suggestions for a good way to refine mesh through small gaps (~5% of diameter)? Currently just trying volumetric controls manually All help is appreciated even if you can only point me in the right direction for one of my questions.
