Default Contours for flow depths of a multiphase flow in Paraview

Hi,
I searched for for flow depth contour in the paraview forum . What I have learned so far is the cells in which alpha.water value is 0.5 is the interface between water and air i.e, that cell is half filled with water.
My question is, If alpha water has a value of, for example, 0.1, 0.2,0.3,......,0.9 etc. doesn,t that mean that the corresponding cells are partially filled. Why don,t we consider these values except for 0.5, while using contour filter in paraview?
