Why run the solver twice ("cavity" tutorial section 2.1.8.2)?

In section "2.1.8.2 Running the code" of the first cavity tutorial on OpenFOAM the user should increase the simulation time and rerun the solver. When I postprocess the flow in ParaView it looks the same and nothing changes except the Courant number (rises from ~0.2 to ~0.6 because of the time-step). Why do I need to run the solver again?
