Apart from tutorials and the OpenFOAM C++ documentation, what is the place of choice to look for the documentation of solvers like simpleFoam?

The OF-extend wiki or journal papers and PhD thesis (via search engine). In theory also CoCoons (http://www.cocoons-project.org/), though I don't think there's much there right now.
