Default [OpenFOAM plus] How to create case files in windows?

I have managed to get openfoam to run fine with the tutorials provided. However I am unsure how to go about writing my own case files to create a model. Is there a certain program that can be downloaded that is useful for writing the files? Or is there a tutorial somewhere on how to use something like notepad to create the files?
