Its the velocity at which the interface between two fluids or fluid phases travels. Usually taken as the average velocity of the two fluids (if you assume that there is no slippage between phases) In segregated multiphase flows a single indicator equation is solved to identify the position of both fluids. This method assumes that the interface is travelling at the average speed of the two phases.
