Ghost Cell Immersed Boundary

I am using Ghost Cell Immersed Boundary method. I would like to apply a linear interpolation by three points in 2D (or 4 points in 3D). The first point is located on the boundary. The second and third points are located in the fluid phase. Point 1 is easy to determine, but the determination of points 2 and 3 is not unique. There are different possibilities to choose points 2 and 3. The choice of these points must be in a way which keeps the interpolating node inside the triangle. Moreover, the area of the triangle must be the minimum possible. I wonder whether there is an algorithm to define the proper points.
