Does anyone know how to calculate the dynamic viscosity for sea water for a given sea water density, temperature and pressure?

Viscosity of sea water is more a function of temperature and salinity. Don't know if there are equations for this, but you can find tables at: http://www.unisense.com/support/pdf/gas_tables.pdf

According to the notes for these tables, they've used some unknown formulas to calculate this: "NOTE! Use tables 1 and 2 for salinities between 0 and 40 ‰ and temperatures between 0 and 40 °C. The formulas used to calculate these tables are only valid in these intervals. The formula used in table 3 is less precise in these intervals, but is a good approximation at higher salinities and temperatures."

I'd guess that both temperature and salinity also is a function of pressure/depth like for density, but how do I calculate this with a good approximation?

You sure like to ask the difficult questions, don't you. Anyway, Cal State, Northridge has just such info that you are seeking. Try: http://www.csun.edu/~sd51881/ocean_env.pdf

This document contains all kinds of good info - but you would need to contact them to find out where they got it from as references are not included. It shows contour plots of salinity throughout the oceans as well as gives some typical salinity and temperature profiles vs. depth.
