Default changes in mesh topology

I am looking to implement a moving mesh formulation into a simple 2D triangluar mesh, with the variables defined at the cell centres. I also hope to allow for changes in topology of the mesh (switching vertices, adding/removing grid points) to help maintain quality. Does anyone know of any material (papers, books) which might help me in this area?
