I am looking into implementing an Arbitrary Lagrangian Eulerian (ALE) formulation into a simple 2D finite volume Euler solver, and I was wondering whether anyone could point me in the direction of any papers or books which might be useful

Try this paper -- I thought that it was very good:

"An Arbitrary Lagrangian-Eulerian Computing Method for All Flow Speeds"

C.W. Hirt et. al

Journal of Computational Physics 14, 227-253 (1974)

Maybe give some more details about the scheme. Explicit/implicit time integration. Upwind/central difference

The scheme is an explicit upwind scheme using Roe's approximate Reimann solver
