As mentioned by Vaidya, "Numerical heat tranfer and fluid flow", SV Patankar, is a really useful reference, that provides an easy-to-understand explanation concerning the difference between central and upwind schemes

I see, everyone has different experiences and therefore recommendations for the literature. The above books are classic. On myself I recommend the book " an introduction in computational fluid dynamics. The finite volume method" by Versteeg and Malalasekera. Because in this books the different schemes (central difference, upwind, hybrid, quick) are presented and explained in detail on an example and it's easy to read.

The book"Computational fluid flow and heat transfer" by S.Muralithar and T.Sundararajan,Narosa Publishers,New Delhi, can be referred to.
