I am not sure how well CMC closure can be discussed in a text book. There are a lot of subtle points in this model. Try to find a review paper instead. Bilger, Kronenburg, Swaminathan are among the prominent researchers who have contributed a lot towards the development of this closure method.

Janicka and Kollmann also developed a second moment closure based on conditioned variables, 4th TSF Symposium, Karlsruhe, (1984).
