thermophysical properties of ham

I need thermophysical properties of ham (ro, c, k). Any idea?

Thermal conductivity of:
pork fat (yum yum): 0.15 (W/mK) lean pork has an orthotropic conductivty perpendicular to fibre: 0.52 (W/mK) parallel to fibre: 0.45 (W/mK) pig skin (yum yum yummmy): 0.37 (W/mK) density is going to be around 1000 (kg/m3) don't know Cp I'm afraid. If it's steady state you're interested in you don't need Cp and rho. Just as a matter of interest .... what are you going to model. Please not the wick effect. |
