Take a look at the Turbulence Section in the pre-release of the CFD Books Guide (a new service of this web-site). I would recommend Wilcox's excellent book. It is easily the best overall turbulence modeling book that I've seen. Btw, the Launder lecture series recommended by Saif are out-of-print asfaik.
