across a normal shock what remains constant? yep i know that total temperature will... but what about mass,momentum,energy,enthalpy? are they all conserved?

This is a very fundamental question. Please go through the basic gas dynamics book. I will suggest you the one by Anderson. From continuity equation, mass should remain conserved. From the thermodynamic laws, energy as well. Usually, pressures and velocities are of major concern as they determine lift and drag forces which we are most interested in.
