I found the book "Computational Fluid Dynamics: Principles and Applications" by J. Blazek to be quite good. It focuses on density-based, finite volume methods.

there are huge number of papers on lu-sgs, lu-ssor, and dual time stepping on AIAA and nasa report.

the book recommended by the one upstairs is also a good reference.
