mesh definition

Hello, I need some help, does anyone knows where I can get the mathematical definitions of mesh types ? hexahedral, tetrhedral etc ? I read the meshing programs, but know one explains how the elements are used in a CFD simulation and the mathematics definition, deg of freedom, number of nodes etc. I will be thankful if somebody can point me to literature on this.
