Making a grid from the XY plot

Hello
I am trying to generate a rectangular grid from the XY plot, but I am having a hard time because the model is not meshed in a constant distance. I am making a rectangular grid from a flat rectangular surface. There is steady flow on one side of the surface and I am measuring its wall shear stress. I have got the plots from the XY plot using the iso-surface and direction vector. However, the nodes are not in constant distance so I cannot form a contour map (by using excel and MATLAB). Is there any way to extract variables in constant spacing instead of its cell or node value? I'm sorry for the long explanation. Please tell me if there are anything you don't understand.
