Default Hoe to model weirs in Gambit and VOF

I`m new user of Gambit and Fluent. I`m looking for tutorials or any guide (pdf files, www etc) that will tell me: i) How to create 3-D model a unsuppressed weirs in open channel (ie. size: 0.55m L x 0.2m W x 0.2m H and finally resolve it in fluent. ii) How to set-up and solve the VOF model .It means that water flow over unsuppressed weirs in open channel. Could anybody help me?
