How do I specify gravity (or local acceleration) as a varying variable with radius: a = omega^2 * Radius ? I have a case with a rotating system where the flow is driven by the rotation. I have successfully applied a constant acceleration as gravity, but for rotating flow that varies with radius.

I think in your case, constant gravity is sufficient. The centrifugal forces will be generated automatically when you use MFR or rotating mesh.

All the best.
