Default evaporation multiphase model ( vof? mixture ? )

hello I have a plain surface with water on the top and a flow of hot air is passing over the water. Some amount of water is evaporated and converted in water vapor in air phase. Which multiphase model should be used ? I would not like use VOF, because i have tried it and i had many convergence problem with solution. Can i use mixture model? Or eulerian multiphase model ? Thanks for help
