Default Velocity LES UDF

Hy every one... I'm trying to make an UDF that can export in a TXT file some information about my velocity field computed using LES. But I can't find how can I acess thouse information via UDF. Some of them are:

1) subgrid-scale turbulent viscosity 2) mixing length for subgrid scales 3) Smagorinsky constant using the Dynamic model or not 4) kinetic energy at small subgrid scales

Does some one ever did something like this???
