Default Writing UDF for Unsteady Temperature change ?

Hi I'm a newbie in FLUENT. I have a couple of qtns regarding natural convection between two fluids.

1)I have two fluid zones(Water and air) in contact with each other. What boundary cdn. should I give at the interface to model convection between them?

2) Also, How to write an UDF for temperature changing with time in water at rest, when a constant heatflux is applied to its base?
