Default multiple mixtures

I am modelling two separate flows (essentially a heat exchanger), and would like each flow to have different mixture properties (i.e. radiative absorption coefficient, species concentrations etc.). How do I define two or more mixtures in the materials panel for use in my simulation?

Thanks, Mark
