Wall Shear Stress is one of the many quantities directly available from Fluent simulation. After you finish your Fluent processing session just go to plot menu and choose XY plot. From boxes under function list choose wall flux in first box and wall shear stress in the second box. If you want other plot types you follow simillar procedures in corresponding menu options.
