CFD for erosion problem

I'm working on erosion testing using a submerged jet device and now want to use CFD to analyze some parameters, such as total pressure and shear stress on the soil surface (water/soil interface) which continuously changes every time during the test. How can I address this water/soil interface as an adjustable profile or do another way. Please suggest me and thank you in advance.
