I have to run a heated flat plate simulation many times with slight differences in the heated wall time-varying temperature profile. I'd like to take my already converged steady state .dat file and initialize from that, is that possible?

Yes it is. Load your steady state .cas and .dat file. Switch to transient calculation under General and set up the additional parameters for transient simulation. Save transient .cas and .dat and you are ready to go.
