Default Oil and water separation

Hi
Im trying to model an oil and water separator . For this i use multiphase eulerien model. But i have some problems. First i dont know how to define phases when enters the vessel to seprate by gravity like settling the water to the bottom of the vessel by stokes law. And the oil phase collects at the top of the water phase. Could any one help me
