Default How to calculate viscous dissipation in Fluent?

Using VOF ith a laminar model, I'm simulating collision of a droplet and a spherical particle. The particle moves very fast (~7 m/s) and so penetrates into the falling droplet and deforms it to a thin liquid film (i.e. a lamella). Please see the attached picture for an overview of the process. Does anyone know what I need to do in Fluent to calculate the "viscous dissipation" takes place in the liquid phase during deformation (i.e from the impact moment until lamella detachment from the particle)?

PS. If there is a way by which I can have access to velocity field only inside the lamella (i.e. within the liquid phase only), then I can probably use the 'calculator device' in Fluent to calculate the velocity derivative to have phi function and then use the attached formula to calculate the energy dissipation. Is there any way to work only with the velocity inside the lamella?

Hello,

If you are using Fluent 17 and later, the viscous dissipation can be turned on in Models->Energy.
