Default Bottom and free surface level for complex bottom structure

I'm trying to set the free surface level and bottom level in my simulation of a dam with a complex bottom structure.
As the bottom is varying in space from each mesh point to the next, I need to be able to set the bottom level as function of the geometry and not as a constant number.

Is this possible? And in that case, how?

I'm grateful for any help.
