I want to put in colours a specific interval of temperature but, when a point is out of this interval, the colours are the same as the limits of the interval I'm studying. So, it's not very clear. Is it possible to put the rest of temperatures in grey or something? Thank you!

If you create a contour plot, rather than simply coloring the region, there is an option to clip the contour to the specified range.
