Default Attached geometry curves

I have created multiple surfaces using Simple Surface and 3 to 4 curves that then combine to create an interface upon which I'm trying to create an unstructured surface mesh.

However, when I run my mesher, the surface mesh basically fails on some of the surfaces, as can be seen in the following figure.


I went back through the log and found that "srf.199" and srf.196" had no curves attached to them. These surfaces can be found in the following figure and correlate to some of the worst of sections of the mesh.


Just to confirm that srf.199 and srf.196 did not have any attached curves, used the "Show Attached Curves" command and no curves were made visible. I also found that the surfaces with bad meshes were missing at least one attached curve.

So my question is, how do I attach curves to surfaces after the surface is created? Why is it that a surface created using a set of curves does not keep the same set of curves as attached?

PS: sorry for the huge images. Still new to this.
